Chicken Bacon Ranch Nachos yo!! For this recipe we got a mixed bag of blue corn and white corn tortilla chips and then topped with the standard melted cheese, grilled chicken (you can bake or grill instead if that's your thing) crispy chopped bacon, ranch sour cream (separate recipe coming soon) and some of our favorite classic nacho toppings!

As with any platter, these will make for a great app, snack or dinner, no time is a bad time for nachos especially when bacon is integrated! #texmex #chickenbacon

Nacho Vitals

  • 12 ounces of tortilla chips mixed masa
  • 1/2 cup can of black beans drained and rinsed
  • 1 chicken breast
  • 3 strips bacon
  • 1 1/4 cup shredded sharp cheddar cheese {or any combination of cheese you like}
  • 1/4 teaspoon cayenne pepper {optional for spice}

  • 1 Fresh tomato diced
  • 1 Green onions green parts chopped
  • 1 Jalapeno sliced {optional}
  • 1 Red chili sliced {optional}
  • 1 cup Ranch Dressing
  • 1 cup Salsa

  • Preheat the oven to 375 degrees F.
  • Prep a baking sheet or cast iron with 2 layers of chips, cheese, and black beans. 1/2 bag of blue corn tortilla and 1/2 bag of restaurant style tortilla was what we used for this recipe. Next spread the black beans over the nachos. Sprinkle the cheese over the nachos. Bake for 6-8 minutes, or until the cheese is bubbling.
  • Add a small amount of olive oil or butter to a skillet on medium heat, and add chicken. Cook 5 to 7 minutes on each side (or until cooked through). Optionally season with cayenne pepper, salt, and/or black pepper
  • Cook bacon in a separate pan on the stove for 8 to 10 minutes on medium heat and let cool for a couple minutes before slicing to smaller chunks to spread on the nachos. This can be done simultaneously with the chicken.
  • Once the nachos are removed from the oven, garnish with fresh tomato, red onion, cilantro, green onion, jalapeño and red chili.
  • Add cooked & cut chicken and bacon to the nacho dish.
  • Serve with ranch and salsa of your choosing.
